Thinly slice the Onion, peel and thinly slice the Potato, chop the Spinach, finely chop the Green chili, grate the Fresh ginger, and chop the Fresh cilantro. Set all prepared vegetables aside in a large mixing bowl.

In a separate bowl, combine the Besan, Cumin seeds, Turmeric powder, Red chili powder, Garam masala, Asafoetida, and Salt. Mix these dry ingredients thoroughly.

Add the sliced Onion, sliced Potato, chopped Spinach, chopped Green chili, grated Fresh ginger, and chopped Fresh cilantro to the bowl with the dry Besan mixture. Toss the vegetables to ensure they are evenly coated with the spice mixture.
