1Carefully clean the Calf liver, removing any membranes or veins. Slice the Calf liver into very thin, small, leaf-like pieces, approximately 2-3 cm in length and width.
2In a shallow bowl, combine the All-purpose flour and 3 grams of Salt. Add the sliced Calf liver to the flour mixture and toss gently to ensure each piece is lightly and evenly coated. Shake off any excess All-purpose flour.
3Heat the Sunflower oil in a deep, heavy-bottomed pan or pot over medium-high heat until it reaches approximately 170-180°C. The oil should be hot enough to sizzle immediately when a piece of liver is dropped in.
