Cut the pork belly block into 5-6 cm cubes.

Place the pork belly cubes in a large pot and cover with 1000 grams of cold water. Add 20 grams of sliced ginger and 50 grams of the green parts of scallion. Bring to a boil over high heat, then reduce heat and simmer for 15 minutes, skimming any scum that rises to the surface.
