1Rehydrate dried wood ear mushrooms in warm water for 20 minutes until soft. Drain, trim any hard parts, and slice into thin strips.
2Prepare the dried tofu by slicing it into thin, even strips, approximately 0.5 cm thick and 4 cm long.
3Julienne the red bell pepper. Slice the ginger, mince the garlic, and separate the white and green parts of the scallion, slicing them diagonally.
