Thoroughly clean the Pork trotters by scrubbing them under cold running water. Remove any remaining hair with a razor or by singeing. Soak the Pork trotters in cold water for at least 2 hours, changing the Water several times, to remove blood and impurities.

Place the soaked Pork trotters in a large pot and add 4000g of fresh cold Water. Bring to a rolling boil over high heat. Boil for 10 minutes, then drain the Water and rinse the Pork trotters thoroughly under cold Water to remove any scum.

Return the rinsed Pork trotters to the clean large pot. Add 3000g of fresh Water, 50g of sliced Ginger, 80g of whole Garlic cloves, 100g of Green onion white parts, and 100g of Soju. Bring to a boil, then reduce heat to low, cover, and simmer for 3 to 4 hours, or until the Pork trotters are very tender and the meat easily separates from the bones.
