1Thoroughly clean 500g cockles by scrubbing them together under cold running water to remove any mud or grit.
2Bring a large pot of water to a rolling boil. Add the cleaned cockles and cook for 1-2 minutes, or until most of the cockles just begin to open. Do not overcook.
3Immediately drain the cockles and rinse under cold water to stop the cooking process.
