1Prepare the Jeju Black Pork Belly by patting it dry with paper towels. Season both sides evenly with 5 grams of sea salt and 2 grams of black pepper.
2To make the Gireumjang (sesame oil dipping sauce), combine 30 grams of sesame oil, 2 grams of sea salt, and 1 gram of black pepper in a small bowl. Mix well.
3To make the Ssamjang (spicy dipping sauce), combine doenjang, gochujang, minced garlic, finely chopped green onions, toasted sesame seeds, and 10 grams of sesame oil in another small bowl. Mix thoroughly.
