1Rinse the Glutinous Rice thoroughly until the water runs clear. Soak the Glutinous Rice in cold water for at least 4 hours, or preferably overnight. Drain well before use.
2Soak the Dried Shiitake Mushrooms and Dried Shrimp in separate bowls of warm water for 30 minutes until softened. Reserve the mushroom soaking liquid. Remove stems from Dried Shiitake Mushrooms and slice them thinly. Roughly chop the Dried Shrimp.
3In a bowl, marinate the Chicken Thigh with 10g of Light Soy Sauce, 5g of Shaoxing Wine, 5g of Sesame Oil, and 1g of White Pepper. Mix well and set aside for 15 minutes.
