1In a medium saucepan, combine the Whole milk, Heavy cream, and Fresh mint leaves. Bring the mixture to a gentle simmer over medium heat, then immediately remove from heat.
2Cover the saucepan and let the Fresh mint leaves infuse in the milk and cream mixture for at least 30 minutes, or up to an hour, to allow the mint flavor to develop.
3While the mint infuses, in a separate bowl, whisk together the Granulated sugar and Egg yolks until pale and creamy.
