1Slice the pork loin against the grain into very thin pieces, approximately 3-4 millimeters thick.
2In a mixing bowl, combine the soy sauce, brown sugar, minced garlic, minced ginger, sesame oil, rice wine, and black pepper. Stir until the brown sugar is fully dissolved and the marinade is well combined.
3Add the sliced pork loin to the marinade, ensuring each piece is thoroughly coated. Sprinkle in the toasted sesame seeds and mix everything well. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the pork loin to absorb the flavors.
