1Cook 150g short-grain rice according to package directions. Once cooked, transfer to a large bowl and let it cool slightly.
2While the short-grain rice is cooking, prepare the vegetables. Wash 150g spinach thoroughly. Blanch the spinach in boiling water for 30 seconds, then immediately transfer to an ice bath to stop cooking. Squeeze out excess water.
3In a bowl, season the blanched spinach with 5g sesame oil, 5g soy sauce, 5g minced garlic, and 1g salt. Mix well.
