1Rinse the Beef foot thoroughly under cold running water. Place the Beef foot in a large pot and cover with fresh Water. Bring to a boil, then drain and rinse the Beef foot again. This step helps remove impurities.
2Return the cleaned Beef foot to the large pot. Add 100g of quartered White onion, 15g of whole Garlic cloves, Black peppercorns, Bay leaves, and 15g of Cilantro. Cover with 4000ml of fresh Water and add 10g of Salt. Bring to a boil, then reduce heat to low, cover, and simmer for 3 to 4 hours, or until the Beef foot is very tender.
3While the Beef foot simmers, prepare the chile sauce. Lightly toast the Dried guajillo chiles and Dried ancho chiles in a dry pan over medium heat for 30 seconds per side until fragrant. Be careful not to burn them. Place the toasted chiles in a bowl and cover with hot Water. Let them rehydrate for 20 minutes.
