1In a large mixing bowl, combine Maida, Rice Flour, Sour Yogurt, Baking Soda, and Salt. Mix well to form a thick, smooth batter. Add a tablespoon or two of water if the batter is too thick, ensuring it's still thick enough to drop.
2Add the finely chopped Green Chili, finely grated Ginger, Cumin Seeds, finely chopped Curry Leaves, finely chopped Fresh Cilantro, and Asafoetida to the batter. Mix thoroughly until all ingredients are evenly distributed.
3Cover the bowl and let the batter rest for 15-20 minutes. This allows the baking soda to activate and the flavors to meld.
