1Wash the Kovakkai thoroughly, trim both ends, and slice them into thin rounds or half-moons.
2Heat Ghee in a large pan over medium heat. Once hot, add Mustard seeds and allow them to splutter.
3Add Urad dal and fry until it turns golden brown. Immediately add Asafoetida and Curry leaves, stir for a few seconds.
