1Rehydrate dried wood ear mushrooms and dried shiitake mushrooms in warm water for at least 30 minutes. Once soft, drain, remove stems from shiitake, and julienne both types of mushrooms.
2Julienne the pork loin, firm tofu, and bamboo shoots. Mince the ginger and garlic. Slice the green parts of the scallions for garnish.
3In a small bowl, combine cornstarch with 40g cold water to make a slurry. Whisk the egg in another small bowl.
