In a large bowl, combine High-gluten wheat flour, Baking powder, Salt, Sichuan peppercorn powder, and Dried chili powder. Mix thoroughly to distribute the spices evenly.

Gradually add Water and 20g Vegetable oil to the dry ingredients. Mix until a shaggy dough forms.

Turn the dough out onto a lightly oiled surface and knead for 5-7 minutes until smooth and elastic. The dough will be soft.
