In a separate bowl, combine Ground pork, finely chopped Scallions, grated Fresh ginger, Light soy sauce, Shaoxing wine, Sesame oil, White pepper, and 2g Salt. Add 30g Water (or chicken broth) and mix vigorously in one direction for 2-3 minutes until the mixture is well combined and sticky.
