1In a small bowl, dissolve the fresh yeast in the warm water and let it sit for 5 minutes until foamy.
2In a large mixing bowl, combine the 00 flour, fine sea salt, and black pepper. Make a well in the center.
3Add the dissolved yeast mixture and 50 grams of lard (softened) to the well. Begin to mix with your hands or a stand mixer until a shaggy dough forms.
