1In a large, heatproof serving bowl or pot, dissolve the 5g of gypsum powder completely in 50g of water. Stir well to ensure no lumps remain.
2Pour the 1000g of unsweetened soy milk into a saucepan. Heat the soy milk over medium heat, stirring occasionally, until it reaches a temperature of 85-90°C (185-195°F). Do not let it boil vigorously.
3Carefully pour the hot unsweetened soy milk from the saucepan into the bowl containing the dissolved gypsum powder. Pour it in one steady stream without stirring the mixture in the bowl.
