1Rinse the Beef bones thoroughly. Place Beef bones in a large pot, cover with cold water, bring to a boil, and blanch for 10 minutes. Skim off any foam, then drain and rinse the Beef bones again.
2Return the blanched Beef bones to the clean pot. Add 50 grams of Ginger (sliced), 50 grams of Scallions (cut into large segments), 5 grams of Star anise, Bay leaves, 10 grams of Dried chilies (whole), and 30 grams of Shaoxing wine (for broth). Cover with 3000 grams of fresh water.
3Bring the broth to a boil, then reduce heat to low, cover, and simmer for at least 3 hours. Skim off any impurities periodically. Season the broth with Salt to taste and keep warm.
