Soak 200g Jasmine rice in 300g water for at least 30 minutes.

Soak 30g Dried scallops in 200g water for at least 4 hours, or overnight. Reserve the scallop soaking liquid.

Blanch 300g Pork ribs: Place pork ribs in a pot, cover with cold water, bring to a boil, then simmer for 5 minutes. Drain and rinse thoroughly under cold water to remove impurities.
