1Lightly crush the fresh ginger, green cardamom, and fennel seeds using a mortar and pestle.
2In a saucepan, combine Water and the crushed fresh ginger, green cardamom, and fennel seeds. Bring to a boil over medium heat.
3Once boiling, add the Assam black tea leaves and Sugar. Reduce heat and simmer for 2-3 minutes, allowing the flavors to infuse.
