1Peel the quince, remove the core, and cut the fruit into medium-sized wedges or cubes. Immediately place the cut quince pieces into a bowl of water mixed with the lemon juice to prevent browning.
2Drain the quince from the lemon water. Transfer the quince pieces to a large pot. Add the granulated sugar, cinnamon stick, and cloves to the pot.
3Pour the water over the quince and other ingredients in the pot. Stir gently to dissolve the granulated sugar.
