30 g butter (unsalted)
0.5 bardak cream (pure or heavy / thickened)

1 yemek kaşığı flour, all-purpose
120 g ham slices
0.5 bardak milk
1 çay kaşığı nutmeg
3 yemek kaşığı parmesan, finely shredded
1 çay kaşığı pinch white pepper
0.25 çay kaşığı salt (cooking / kosher salt)
0.5 bardak shredded Gruyere cheese
4 dilim Sourdough bread slice
8 dilim Swiss or Gruyere cheese
1 yemek kaşığı unsalted butter

Preheat oven to 200°C/390°F (180°C fan).

Heat milk and cream: Place milk and cream in a saucepan over medium heat. Heat until steaming, but don't let it boil. Set aside.

Make roux: Melt butter in a separate small saucepan over medium heat, then turn the heat down to low. Add flour and cook, stirring almost constantly, for 3 minutes. Don't let it brown.
