1Rinse the White short-grain rice thoroughly under cold water until the water runs clear. Place the White short-grain rice in a bowl, cover with fresh water, and let it soak for at least 1 hour, or preferably 2-3 hours.
2While the White short-grain rice is soaking, prepare the Perilla leaves by washing them well and patting them dry. Finely chop the Perilla leaves. Mince the Garlic.
3Drain the soaked White short-grain rice completely. It will have expanded slightly.
