1Clean the Chicken gizzards thoroughly, removing any tough membrane or fat. Slice the Chicken gizzards into thin, bite-sized pieces.
2In a bowl, marinate the sliced Chicken gizzards with 15g Shaoxing wine, 10g Light soy sauce, White pepper, and 5g Cornstarch. Mix well and set aside for 15 minutes.
3Prepare the vegetables: Slice the Dried chilies into 1-inch pieces. Thinly slice the Ginger and Garlic. Slice the Fresh red chilies and Green bell pepper into similar bite-sized pieces. Separate the white and green parts of the Scallions; slice the white parts for stir-frying and chop the green parts for garnish.
