1Rinse the Azuki beans thoroughly under cold water. Place Azuki beans in a large pot with 600 grams of Water and bring to a boil over high heat. Boil for 5 minutes, then drain the Water.
2Return the blanched Azuki beans to the pot with 400 grams of fresh Water. Bring to a boil, then reduce heat to low, cover, and simmer for 60-90 minutes, or until the Azuki beans are very tender. Add more Water during simmering if necessary to keep the beans submerged.
3Once tender, drain any remaining liquid from the Azuki beans. Return the Azuki beans to the pot. Using a potato masher or wooden spoon, gently mash the Azuki beans to your desired consistency.
