1Rinse the Mung beans thoroughly under cold running water until the water runs clear.
2Place the rinsed Mung beans in a large bowl, cover with fresh Water, and soak for at least 2 hours, or preferably overnight.
3Soak the Dried tangerine peel in a small amount of warm Water until softened, about 15 minutes. Once soft, scrape off any white pith from the inside of the peel using a spoon, as it can impart bitterness.
