1Rehydrate the Dried wood ear mushrooms in warm water for at least 30 minutes until soft, then rinse thoroughly and trim any tough stems. Slice the rehydrated wood ear mushrooms into bite-sized pieces.
2Thinly slice the Ginger and Garlic. Cut the Scallions into 2.5 cm segments, separating the white and green parts. Snip the Dried red chilies into 1 cm pieces.
3Crack the Eggs into a bowl, add 1 gram of Salt and the White pepper, then beat vigorously until well combined.
