Finely mince the Ginger and Garlic. Slice the white parts of the Scallions for cooking and finely chop the green parts for garnish.

Heat the Cooking oil in a wok over medium-high heat. Add the Minced pork and stir-fry, breaking it apart, until it is browned and crispy, achieving wok hei. Drain any excess fat.

Push the Minced pork to one side of the wok. Add the minced Ginger, minced Garlic, and sliced white Scallions to the clear side and stir-fry until fragrant, about 30 seconds.
