1Thinly slice the Cucumber into rounds, approximately 2mm thick. A mandoline can be used for even slices.
2Place the sliced Cucumber in a bowl and sprinkle evenly with Salt. Gently mix and let it sit for 10-15 minutes to draw out excess water.
3While the Cucumber rests, rehydrate the Dried wakame by soaking it in cold water for 5-7 minutes until it expands and becomes tender. Drain well and gently squeeze out any excess water. If the pieces are large, cut them into bite-sized lengths.
