1Thoroughly wash the Chicken pieces and pat them dry with paper towels.
2Rinse the Goji berries and Red dates under cold water. Soak them in warm water for 10 minutes, then drain.
3Peel the Ginger and slice half of it into thin rounds, then julienne the remaining half. Wash the Scallion and cut half into 5cm lengths, then finely chop the remaining half.
