1Thinly slice the Flank steak against the grain into bite-sized pieces. In a bowl, marinate the Flank steak with 5g Light soy sauce, 10g Shaoxing wine, Cornstarch, 2g Vegetable oil, and 1g White pepper. Mix well and set aside for at least 15 minutes.
2Gently separate the Fresh flat rice noodles to prevent clumping. If they are very stiff, you can briefly blanch them in hot water and drain immediately, but avoid overcooking.
3In a separate bowl, whisk the Eggs with 2g Shaoxing wine, 1g Light soy sauce, and 1g White pepper until just combined.
