1Thoroughly clean the Beef omasum by scrubbing it under cold running water. Remove any impurities or tough membranes.
2Bring a large pot of water to a rolling boil. Add half of the sliced Ginger and half of the Scallion to the boiling water.
3Add the cleaned Beef omasum to the boiling water and blanch for 5 minutes. Remove the omasum and rinse it under cold water. Drain well and cut into bite-sized pieces, approximately 5 cm by 3 cm.
