11. Clean the Pork liver, Pork heart, Pork kidney, and Pork belly with skin. Cut all the offal and pork belly into small, uniform 1-2 cm pieces.
22. Blanch the cut Pork liver, Pork heart, Pork kidney, and Pork belly with skin in boiling water for 5-7 minutes. Drain thoroughly and set aside.
33. To prepare the Sorpotel masala, grind the Dried red chilies Byadagi, Dried red chilies Kashmiri, Cumin seeds, Black peppercorns, Cloves, Cinnamon stick, and Green cardamom with a small amount of White vinegar to a very fine paste.
