1Clean the curry leaves thoroughly and spread them on a clean cloth to air dry completely, ensuring no moisture remains.
2Heat a heavy-bottomed pan or kadai over medium-low heat. Add ghee and allow it to melt.
3Add urad dal and chana dal to the pan. Roast them, stirring continuously, until they turn golden brown and release a fragrant aroma. Remove the roasted dals and set them aside to cool.
