1Preheat your oven to 220 degrees Celsius. Line a 20cm springform pan with two sheets of parchment paper, ensuring the paper extends well above the rim.
2In a large mixing bowl, combine the 600g cream cheese and 180g granulated sugar. Beat with an electric mixer on medium speed until smooth and creamy, with no lumps.
3Add the 180g large eggs one at a time, beating well after each addition until fully incorporated. Scrape down the sides of the bowl as needed.
