1Bring a large pot of water to a rolling boil. Add a pinch of salt and the olive oil to the water, then add the Spaghetti and cook according to package directions until al dente.
2While the Spaghetti cooks, prepare the Mentaiko sauce. Slit the Mentaiko sacs lengthwise with a knife and carefully scrape the roe into a medium mixing bowl, discarding the membrane.
3To the bowl with Mentaiko roe, add the Unsalted butter, Koikuchi soy sauce, Mirin, and Dashi stock. Mix thoroughly with a spoon or whisk until all ingredients are well combined and the sauce is creamy.
