Heat the Vegetable oil in a large pan or wok over medium heat. Add the sliced Shiitake mushrooms and sauté for 5-7 minutes until they have softened and released their moisture.

While the mushrooms are cooking, prepare the seasoning mixture. In a small bowl, combine the Soy sauce, Sesame oil, Minced garlic, and Black pepper.
