In a large bowl, combine the 00 flour, 200 grams of Granulated sugar, Unsweetened cocoa powder, Cinnamon powder, Ground cloves, and Ground nutmeg. Mix well to distribute the dry ingredients evenly.

In a separate small bowl, dissolve the Ammonia for sweets in 30 grams of the Water (from the 150 grams allocated for the dough).

Add the Honey and Orange zest to the dry ingredients. Gradually add the remaining Water (120 grams) and the dissolved Ammonia for sweets.
