Slice the Flank steak against the grain into thin pieces, about 0.5 cm thick.

In a bowl, combine the sliced Flank steak with 15g Light soy sauce, 15g Shaoxing wine, 10g Cornstarch, Sesame oil, and White pepper. Mix well to coat the Flank steak and marinate for at least 15 minutes.

In a separate small bowl, whisk together Crushed black pepper, Oyster sauce, Dark soy sauce, 15g Light soy sauce, 10g Shaoxing wine, Granulated sugar, 5g Cornstarch, and Water to create the black pepper sauce. Set aside.
