1Carefully clean the Monkfish liver by removing any visible blood vessels and membranes. Rinse it under cold water.
2Rub the Monkfish liver generously with Salt and let it sit for 15 minutes to draw out impurities. Rinse thoroughly under cold water again and pat dry.
3Place the cleaned Monkfish liver in a shallow dish and pour the Sake over it. Let it soak for 30 minutes, turning once, to remove any remaining fishiness.
