1. Prepare bamboo leaves: Wash the Bamboo leaves thoroughly. Soak them in hot water for at least 30 minutes, or until pliable. Trim the hard stems.

2. Prepare glutinous rice: Wash the Glutinous rice until the water runs clear. Soak the Glutinous rice in cold water for at least 4 hours or preferably overnight. Drain well before use.

3. Prepare pork belly: Cut the Pork belly into 3cm cubes. In a bowl, combine the Pork belly with 40 grams Light soy sauce, 20 grams Dark soy sauce, 25 grams Shaoxing wine, Five-spice powder, 1 gram White pepper, and 10 grams Sugar. Mix well and marinate in the refrigerator for at least 4 hours, or preferably overnight.
