1Wash and trim the Scallions. Cut the green parts into 5cm lengths and the white parts into 2cm lengths.
2Heat the Neutral Oil in a wok or large pan over medium-low heat. Add the white parts of the Scallions. Fry gently until fragrant, about 2-3 minutes.
3Add the green parts of the Scallions to the wok. Continue to fry slowly, stirring occasionally, until the Scallions are deeply browned and crispy, about 15-20 minutes. The Neutral Oil should be infused with scallion flavor.
