1Wipe the Kombu with a damp cloth to remove any impurities. Place the Kombu and 1500g Water in a large pot.
2Heat the pot gently over medium-low heat. Just before the Water comes to a boil, remove the Kombu to prevent bitterness.
3Bring the Water to a rolling boil, then turn off the heat. Add the Katsuobushi to the hot Water and let it steep for 30 seconds.
