1Wash the Idli rice, Urad dal, and Fenugreek seeds thoroughly under running water. Soak them together in 700 grams of water for a minimum of 4 hours, or preferably overnight.
2Drain the soaked Idli rice, Urad dal, and Fenugreek seeds, reserving a small amount of the soaking water if needed. Grind them in a wet grinder or high-power blender with fresh water (start with 100 grams and add more as needed, up to 300 grams total) until a very smooth, thick batter is formed. The batter should have a consistency similar to pancake batter.
3Transfer the batter to a large bowl, ensuring there is enough space for it to rise. Cover the bowl and let the batter ferment in a warm place for 8-12 hours, or until it has doubled in volume and appears light and airy.
