1Rinse the dried red beans thoroughly and soak them in cold water overnight, or for at least 8 hours.
2Drain the soaked red beans, then transfer them to a large pot. Add fresh water to cover the red beans by about 5 cm. Bring to a boil, then drain immediately. This step removes any bitter taste.
3Return the red beans to the pot and add enough fresh water to cover them by about 7 cm. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the red beans are very tender and easily crushed.
