1. Rinse the Short-grain white rice thoroughly under cold water until the water runs clear. Cook the Short-grain white rice with Water according to package instructions or in a rice cooker.

2. Peel and thinly slice the Yellow onion against the grain.

3. In a small bowl, combine the Soy sauce, Mirin, Sake, Granulated sugar, and Dashi stock. Stir well until the Granulated sugar is fully dissolved. This is your gyudon sauce.
