1Rinse the Short-grain rice thoroughly until the water runs clear. Place the Short-grain rice in a bowl, add enough Water to cover, and soak for at least 30 minutes.
2While the Short-grain rice is soaking, prepare the Shrimp. Dice half of the Shrimp into small pieces and leave the other half whole. Pat the Shrimp dry with paper towels.
3Finely dice the Carrot and Zucchini. Mince the Garlic and Ginger. Chop the Scallions, separating the white and green parts.
