1Rinse the Dried longans thoroughly and place them in a bowl. Add 200 grams of Water and let them soak for at least 30 minutes until plump. Drain the Dried longans, reserving the soaking water. Pit the longans if they are not already pitted, then roughly chop half of the longans and leave the other half whole.
2Peel the Fresh ginger and grate it finely. Squeeze the grated Fresh ginger through a fine-mesh sieve or cheesecloth to extract 15 grams of pure ginger juice. Discard the pulp.
3In a large mixing bowl, combine the Glutinous rice flour and Wheat starch. Whisk them together thoroughly to ensure no lumps.
